Tutti frutti is a popular Indian sweet ingredient made from raw papaya cubes that are candied and colored to create bright red, green and yellow pieces. They are widely used in cakes, cookies, ice creams, buns and festive sweets. This homemade version is healthier, preservative-free and budget-friendly compared to store-bought ones.

Ingredients

  • 2 cups raw papaya
  • 1 ½ cups sugar
  • 2 cups water
  • ½ tsp vanilla essence (optional)
  • Food colors (red, green, yellow – a few drops each)

Directions

  • Prepare Papaya: Peel raw papaya, remove seeds and cut into very small cubes.

  • Blanch: Boil water in a pan and add papaya cubes. Cook for 2-3 minutes until slightly soft. Drain and keep aside.

  • Make Sugar Syrup: In another pan, heat 1 ½ cups sugar with 2 cups water. Stir until sugar dissolves.

  • Cook Papaya: Add blanched papaya cubes into the sugar syrup. Simmer for 15 minutes until they turn translucent.

  • Flavor: Add vanilla essence (optional) for aroma. Mix well.

  • Divide & Color: Divide papaya cubes into separate bowls. Add 2-3 drops of different food colors in each bowl. Mix well and let sit for 12-24 hours to absorb colors.

  • Drying: Spread colored cubes on a tray lined with butter paper. Air dry for 24-48 hours or until they are completely non-sticky.

  • Store & Use: Store in an airtight jar. Use in cakes, muffins, cookies, ice creams and desserts.
